Couscous Cake with Berries

Ingredients

2 cups fresh strawberries blackberries or blueberries

6 cups of apple juice

1 tablespoon vanilla extract

3 cups couscous

Directions

Wash the berries gently under cold water and place to dry on a paper towel.

Place the apple juice, vanilla and couscous in a large saucepan and bring to a boil, stirring continuously until the couscous has absorbed all the juices and thickened.

Gently fold in the berries while mixture is hot.

Rinse a baking pan and leave undried.

Transfer the mixture immediately into the baking pan, place in the refrigerator to chill and set; it takes approximately 3 hours.
